Baked Sweet Potato Skins with Adobo Sour Cream

Ingredients

  • 4 sweet potatoes
  • 3 tablespoons melted butter
  • 1 cup shredded cheddar cheese
  • 2 scallions, thinly sliced
  • Sea salt
  • Freshly ground black pepper

Sweet potato skins are a nice alternative to white potatoes, and marry well with the great smokiness of the adobe sour cream.

Makes 32 potato skins

Directions

Preheat the oven to 350 degrees. Scrub the sweet potatoes and pat them dry. Place them on a baking tray and bake for about 1 hour, or until fork tender. Remove from oven and let cool.

Heat the broiler.

Split the potatoes in half lengthwise and scoop out most of the flesh, leaving about 1/4 inch. Cut each half in half, then in half again. Each potato should yield 8 pieces.

Place the potato skins on a baking tray and brush them with melted butter.

Broil potatoes for 10 to 12 minutes, until crispy and light golden brown. Remove from the oven and sprinkle with shredded cheese and scallions. Heat under the broiler for 3 to 4 more minutes until the cheese is bubbly and golden brown. Season with salt and pepper.

Serve with Adobo Sour Cream.
