Mint Tzatziki


  • 3/4 cup nonfat Greek yogurt
  • 1 cucumber, peeled, seeded and finely diced
  • 1 clove garlic, minced
  • 1 TB chopped fresh mint leaves
  • 1 tsp apple cider vinegar
  • kosher salt and freshly ground black pepper

Yields 1 cup


Mix together the yogurt, cucumber, garlic, mint leaves and vinegar. Season to taste with salt and pepper. Set aside in the refrigerator if not using soon.
