Turkey Meatballs

Ingredients

  • 2 Tablespoons olive oil
  • 1/2 large Spanish onion, finely diced
  • 1/2 cup whole milk
  • 1/2 red bell pepper, seeded and finely diced
  • 2 large eggs lightly beaten
  • 3 slices of white or wheat bread, crusts removed, cut into 1 inch cubes
  • 1 1/2 teaspoons chopped fresh rosemary
  • 2 tablespoons chopped flat leaf parsley
  • 3/4 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 1 1/2 teaspoons kosher salt
  • 1/2 cup grated parmesan
  • Freshly ground pepper

This is one of those recipes with a lot of ingredients – but don’t let that scare you. The meatballs come together very easily and you’ll love them!

Directions

  • Preheat the oven to 350 degrees F. Lightly coat a baking sheet with neutral vegetable oil, such an canola oil.

    Heat the olive oil in a medium skillet over medium high heat. When hot saute the onions and peppers for about 5 minutes.

    Meanwhile put the milk, eggs, bread cubes in a large mixing bowl and add the rosemary, thyme, parlsey, oregano, and garlic. Add the sauteed vegetables and let the mixture sit for 3-4 minutes or until the bread absorbs the liquid.

    Add the turkey, cheese, and salt and season to taste with pepper. Stir to mix well.

    Dampen your palms and roll the turkey mixture into 18 meatballs, each about 2 inches in diameter. Set the meatballs on the baking sheet, leaving a little space between each one. Bake for about 15-18 minutes or until cooked through
