Gingered Salmon Burgers

Ingredients

  • 1 1/4 pounds of skinless salmon fillet, cut into 1 in pieces.
  • 4 scallions, trimmed and thinly sliced
  • 1 garlic clove, minced
  • 3 tablespoons minced, fresh peeled ginger
  • 3 tablespoons hoisin sauce
  • 1 teaspoon kosher salt, plus more for seasoning
  • freshly ground black pepper
  • 2 tablespoons canola oil
  • 4 hamburger buns
  • about 2 tablespoons mayonnaise
  • toppings for burger

These go great with buns, without buns, and on top of salads or veggies!

Directions

Put the salmon, scallions, garlic, ginger, hoisin sauce and 1 teaspoon of salt in a food processor and process until smooth. Season to taste with pepper and pulse to mix.

For the mixture into four patties and season lightly with salt and pepper.

In a large saute pan, heat the oil over the medium heat until shimmering and cook the salmon burgers for 3-4 minutes on each side, or just until cooked through.

Lower the heat during cooking if the marinade remaining on the burgers starts to caramelize

Spread the burger buns with mayo and top with salmon burger. Top the burgers with tomato, onion, and lettuce and serve.
