Greek Lamb Burgers with Mint Tzatziki Mayonnaise

Ingredients

  • 1 pound ground lamb
  • 1/4 onion, grated (about 1/2 cup)
  • 1 garlic clove, minced
  • 1 large egg
  • 15 kalmata olives, pitted and chopped
  • 1 1/4 tsp salt
  • 1 tsp chopped fresh oregano
  • 3/4 tsp ground cumin
  • 3 oz feta cheese, crumbled
  • freshly ground black pepper
  • 2 TBS canola oil
  • 4 pita pockets or pieces of na’an
  • 4 slices fresh, ripe tomato

If you like the full, rich flavor of ground lamb, these burgers are out of this world! The tzatziki, made with thick yogurt and fresh mint leaves, is the crowning touch.

Directions

Mix together the lamb, onion, garlic, eggs, olives, salt, oregano and cumin. When well mixed, gently fold the feta cheese into the mixture and season with salt and pepper. Form the meat into four patties.

Heat the oil in a medium saute pan over medium-high heat and when shimmering, cook the patties for about 4 to 5 minutes on each side or until cooked to your desired degree of doneness.

Serve each burger tucked in the pita pockets or na’an with a tomato slice. Top each burger with a good tablespoon of tzatziki.
