Soy and Lime Grilled Tuna

Ingredients

  • 3/4 cup soy sauce
  • 2/3 cup sake
  • 1/3 cup sugar
  • 4 scallions, thinly sliced
  • 4 cloves garlic, peeled and thinly sliced
  • Zest and juice of 1 lime
  • 2 tablespoons mirin or sweet sherry
  • 6 (5-ounce, 3/4-inch thick) pieces high-quality tuna
  • Sea salt
  • Freshly ground black pepper

This quick Asian marinade is perfect for the summer – nice subtle flavors that complement the meaty tuna steak. It’s also great on other types of fish and chicken.

Directions

In a large glass or ceramic pan, combine the soy sauce, sake, sugar, scallions, garlic, lime zest and juice, and mirin and stir to dissolve the sugar.

Add the tuna to the pan and marinate for 11/2 to 3 hours in the refrigerator, turning once during the marinating.

Heat your grill to medium high. Lightly oil the grill or spray with cooking spray.

Remove the fish from the marinade and season with salt and pepper. Grill the tuna for about 2 minutes per side, keeping it rare to medium rare in the center.
