Watermelon, Tomato and Feta Salad


  • 3 cups diced, seedless watermelon
  • 1 pint grape tomatoes, halved lengthwise
  • 10 pitted Kalamata olives, halved
  • 1/2 small red onion, thinly sliced
  • 1/2 cup basil leaves cut in a chiffonade
  • 1 tablespoon chopped fresh mint
  • 6 ounces feta cheese crumbled or diced
  • 1/2 cup lime vinaigrette, more or less to taste
  • Kosher salt and freshly ground black pepper

This fresh dish, goes with everything in the summertime!

Serves 6


Mix together the watermelon, tomatoes, olives, onion, basil, and mint and toss gently. Add the feta and Lime Vinaigrette and toss gently. Season to taste with salt and pepper.
