An Aux Délices favorite, this toothy wheat berry salad is not only delicious but very healthy!
Fill a large pot with 8 cups of water. Add the wheat berries and bring to a boil over high heat.
Reduce the heat to low and simmer for 50 to 60 minutes, until just tender.
Drain and cool for 20 to 25 minutes.
When the wheat berries have cooled but are still warm, add the pine nuts, scallions, cranberries, olive oil, and vinegar. Toss to combine and season with salt and pepper.
Chill completely in the refrigerator before serving.
